There is a fabulous book: The measure of all things, Ken Alder. about the French effort to survey France and measure the globe started in 1792.

A key character in the book is the Borda repeating circle a surveying tool that automates making repeated measurement and is therefore supposed to achieve extraordinary accuracy.

While an abstract mathematical object such as a 'fair coin' may limit towards what we expect, real physical measurements may not do so.
